South African sparkling wine made with the traditional method is called “Méthode Cap Classique.” For these wines, a second fermentation takes place in the bottle creating the wine’s tiny bubbles. This wine is a classic blend of Chardonnay and Pinot Noir. Extended time on lees has resulted in intricate autolytic character. It tastes of plum, cherry, strawberry, rhubarb and baked bread.
