Aristea Pinot Noir Hemel-en-Aarde Ridge, 2020

Restrained earthy fruits, with more floral, red and sour cherry notes on the palate. It is supple with good acidity and will benefit from some bottle maturation before reaching optimum drinking. Pinot Noir grapes were selected from two sites at the end of the Hemel-en-Aarde ridge. Grapes were handpicked into small lug boxes and placed in a cold room overnight at 5°C. Whole berries were then placed into open-top fermenters and a cold maceration was carried out for 3-4 days. The wine spent 15 days on skins and was then racked to barrel. It was matured in French oak barrels for 11 months with 10% new.
