Yeasty savoury notes characterize Jérôme’s 2018 Les Chouacheux with fruits in the background. This is a rich mouth-filling wine with good mid palate and a soft silky texture. It is much firmer and more structured than the Chassagne-Montrachet, with supple tannins and ripe cherry flavours on the finish. It will merit cellaring for some time before being at its optimum for drinking. Produced from Jérôme’s oldest vines, this Premier Cru site sits close to the famous Clos des Mouches vineyard on dark brown, clay and alluvial soils. Planted in 1952, Jérôme purchased his 0.5-hectare plot in 2010. Les Chouacheux was matured for ten months in oak from the Bertrange Forest in Allier with 25% new oak.
