Limoux is historically known for its sparkling wines, and it is believed that monks at the abbey in Saint-Hilaire were the first to ever produce sparkling wine fermented in bottle – as far back as 1531. Mauzac grapes are the local speciality and make up 90% of cuvée Bulles d’O with 5% each of Chardonnay and Chenin Blanc. Bready aromas with lime custard and honeydew melon gives lots of appeal. It is fresh and crisp on the palate with lemony citrus flavours and nice easy-drinking fruit. The Blanquette de Limoux Appellation rules require the wine is kept in bottle on lees for a minimum of nine months; in this case, Oliver left it for a total of two years producing a fine creamy mousse.
