The monks at the Saint-Hilaire monastery invented sparkling Blanquette de Limoux in 1531, a full 150 years before sparkling wines became de rigueur in Champagne. Blanquette de Limoux is made using the Mauzac grape, known locally as Blanquette, blended with Chenin Blanc and Chardonnay. Bulles d’O has some hoppy aromas with white fruits and a hint of cheese rind. On the palate, it has a fine creamy mousse and good balance.
