A delicious sparkling wine for any occasion, it is pale in colour with appealing white fruits, lime custard and lemon sherbet aromas. The creamy mousse produces a smooth palate with nice lemon acidity. Fermented in bottle to produce the bubbles, it was matured on lees for two years. The monks of the Abbey of Saint-Hilaire started making sparkling wine in 1531; 150 years before Champagne was invented.
