Appassimento refers to the process of partially drying wine grapes before fermentation. This causes water to evaporate, concentrating grape sugars and flavours. This youthful 2023 cuvée is dense and brooding, with oaked aromas over ripe dark fruit. The palate is firm with bright red and dark fruit, underscored by savoury notes. Bold tannins frame the finish. 2025-2029–JB
