“O” stands for Oliver, Floris and Vicky’s son. Domaine d’O is his and consists of 12 hectares in the Limoux appellation. Vines are planted at 400 metres altitude with an ensuing cool climate compared to other regions in the Languedoc making it ideal to create more Burgundian wine styles. Floris and Vicky lived in Burgundy when they met; Oliver was born and spent his early years there, so it is perhaps only natural that he is drawn to making such wine styles. Domaine d’O 2019 Chardonnay is an oaky wine with aromas of butterscotch, toffee and yogurt. It was part-matured in new oak barrels from the forests of Bertranges and Nièvre. Cooked pears, tropical fruit and custard lead to a firm finish. 2019 was Oliver’s second vintage at Domaine d’O, and the results are impressive.
