Tasted as a young barrel sample, the Domaine d’O had pear, lemon and mandarin aromas combined with cedary and resin notes. Chardonnay was picked at night, fermented and a partial malolactic fermentation occurred similar to techniques used in Burgundy. The wine was part aged in French oak barrels with 35% new oak from Bertranges and Nièvre.
