The Vin de Paille designation represents a fraction of the Jura’s production. This remarkable example is made from a blend of Chardonnay, Savagnin and Poulsard by a process called “passerillage” where the grapes are air dried for a minimum of six weeks prior to fermentation. This concentrates the wine’s flavours and sugars resulting in a sumptuous dessert-style wine. These meticulously made wines are required to age for a minimum of three years before release, of which 18 months must be in wood. The Domaine Durand Perron Vin de Paille was aged for three years in five-year-old barrels. Mature oak such as this enhances the wine’s complexity and mouthfeel versus imparting an oaky flavour. Everything about this wine says luxury, from its intricate profile of almond, hazelnut, caramel and honey to its seemingly endless finish. Superb! 2023 – 2027 LW
