ELISABETH FINE COGNAC CASE - ONE BOTTLE EACH: VS, VSOP, XO
ELISABETH VS FINE COGNAC, AOC COGNAC FINS BOIS
Blend of Colombard and Ugni Blanc, VS spends over four years in Limousin oak. A pale amber in appearance, the aromatic set shows a nice range of butterscotch, fusil oils, poached pear and yellow plum, fig and honey. It starts with a supple, soft attack, has a light to medium weight and follows the nose with poached pear/plum, fig, honey and butterscotch notes before it “heats up” very slowly towards a nice long butterscotch-, fig- and prune-laced finish.

ELISABETH VSOP FINE COGNAC, AOC COGNAC FINS BOIS
This VSOP spends six years in oak. It is a light amber color in the glass with the aromas of dried flowers and herbs, wood varnish, butterscotch, vanilla and dried pear. The palate opens with a soft attack yet with an edge and is medium weight, showing a nice length with an implied sweetness beginning to build ahead of the alcoholic warmth. The latter peaks to quite high values – almost bitingly hot – and then wanes with honey and butterscotch onto a medium finish.

ELISABETH XO FINE COGNAC, AOC COGNAC FINS BOIS
This medium-amber potion spent over 15 years in barrels. It shows subtle with an elegant delivery, medium-intensity aromas of honey, poached pear and butterscotch nicely wrought with a slight hint of apricot. The palate is medium weight with a nice soft and supple entry, a nice length and notes of prune, fig, poached pear and butterscotch with the heat building quite late on the palate towards a long, warm, prune, fig and chocolate finish.
