Aromas reminiscent of the wild scrub in spring and summer – lavender, wild herbs and blueberries – are all present. This is a light- to mediumbodied Fitou with fresh tangy fruit flavours and a powdery cocoa finish made by Katie’s husband, JeanMarc Astruc, who comes from a traditional winemaking family in Tuchan. Grapes for this came from three sites: Puy de la Gardie, a hillside with clay and limestone soils; Les Rouires, in the valley on colluvial and schist soils; and La Tuilerie, in the valley on clay and limestone. This new range of wines was inspired by the numerous wildflowers and herbs found in vineyards around Fitou including wild rosemary, lavender and olive.
