Given the cool climate in the Darling Hills, it’s no wonder that Riesling feels right at home here. The 2020 has lots of honey, spices and resin aromas. A touch of residual sweetness creates a soft wine with good weight balanced by the grape’s naturally high acidity giving a certain tanginess. Riesling was field-grafted onto Cabernet Sauvignon vines in 2007. Grapes were lightly pressed with only the free-run juice fermented at low temperature.
