Deep in colour, Herbarium Carignan has mellow, cooked plummy fruits and mulberry jam aromas. It is soft, smooth, mediumbodied and dense with a fine-grained texture and lingering flavours. It was produced from Carignan grown in two sites, both organically farmed: Puy de la Gardie and Les Rouires. Vinification was adapted to keep the tannins soft by first placing a layer of hand-picked whole-bunch Carignan in the bottom of the tank, then filling with destalked grapes. It was kept on skins for eight days.
