Intense savoury and spicy aromas with celery salt and a touch of smoke. Listán Negro is indigenous to the volcanic island of Tenerife off the west coast of Western Sahara, Africa. The largest of the Canary Islands owned by Spain, it has a hot, dry climate. Produced by Suertes del Marqués, the Listen vineyard was planted approximately 80 years ago in the Valle de la Orotava, north of Tenerife, with 11 hectares at between 300-750metres. The vines are cultivated in the traditional braided or "multiple cordon" system unique to Tenerife, which captures moisture and protects the vines from prevailing Saharan winds. Similar spicy flavours follow through onto the palate, which is relatively light-bodied, leading to some grippy tannins and a long spicy finish. It was fermented by wild yeast in concrete tanks followed by maturation in a mix of old wooden foudres and concrete tanks.
