Treacle, coffee and dark fruit aromas lead to a supple palate with more raisin and earthy flavours. Traditional Valpolicella varieties Corvina, Corvinone and Rondinella were grown on the hills at Negrar at between 300 and 420 metres. Grapes were harvested by hand and fermented in tank. A second “ripasso” fermentation on Amarone grapeskins was carried out some months later, then the wine was matured in barrel for nine months.
