Fattoria Sorbaiano’s luscious Vin Santo dessert wine is made by air drying Trebbiano grapes after harvest for a four-tofive-month period. This gentle raisining process results in heady sweetness, vibrant acidity, and concentrated flavours. Pretty pale copper in colour, the 2013 vintage is rich and satiny smooth, with intense flavours of roasted nuts, dried apricots, and caramel. Lengthy ageing in neutral oak casks gives a rounded, earthy character to the finish. 2023-2043 – JB
