An elegant, more complex style of Sauvignon compared to First Lady, Professor Black has aromas of peaches, nectarines and cassis. Sauvignon came from two blocks on the estate situated high up on Simonsberg: one planted in 2003, the other in 1985. Multiple pickings were carried out to harvest grapes at different levels of ripeness leading to complex aromatics and texture.
