I Pastini
Located in the heart of Valle d’Itria, I Pastini established its roots in the year 1996. Ancient wine-growing traditions and modern winemaking techniques combine in order to obtain wines that express the authentic nature of a territory extremely suited to the production of wine. Managed by the Carparelli family and stretching over an area of 15 hectares, our goal is both to recover and to promote native grape varieties such as Minutolo, Verdeca, Bianco d’Alessano (white grapes) and Primitivo and Susumaniello (red grapes). The family-run estate tends to be organically minded, putting great emphasis on environmental sustainability, which means that no chemicals are used. The vineyards are treated exclusively with organic products and fertilized with green manure of various leguminous species and the grape harvest is entirely by hand.
