Sorbaiano’s 2012 Vin Santo has a complex bouquet with caramel, toffee, barley sugar and marmalade components. This sweet dessert wine, bright orange in colour, was made from Trebbiano grapes. These were picked and then hung on racks in a drying room for 4-5 months. After gentle pressing, the intensely concentrated juice was put into barrels and left to its own devices to ferment naturally and mature. It is sweet with delicious orange, other citrus and vanilla notes and a harmonious acidity giving balance and length.
