Brandies from Jerez are aged in the region’s traditional solera system of stacking barrels in multi-level towers, each layer from a new vintage. Each time a portion of wine is drawn off from the bottom (the oldest) layer, the barrels are topped with the layer just above. This process of fractional blending allows complex, multi-vintage flavours to develop. This smooth, powerful brandy ages for over ten years in solera.–JB
