This 'Col Fondo' style of Prosecco flies in the face of the "chill it down and drink it young" Prosecco mantra. Made in the traditional method and not disgorged, it stays on the fine lees until you, Dear Reader, decide to open it! Slightly cloudy and with more intense aromas of brioche, red apple, apricot and sweet almond, the lees allow this to develop gracefully for a number of years. I've enjoyed many vintages, and it packs on interesting complexity with age, including pastry notes, vanilla and even red fruit. Moreover, it's a conversation starter at any dinner party. The trick is to pour slowly to avoid unduly disturbing the sediment. 2027-2030 – MP.
